Boxty on the Pan

1 cup flour
1 raw grated potato
2 teaspoons baking powder
salt to taste
2 eggs
milk to mix


Squeeze the grated potatoe in a cloth towel removing as much moisture as possible, sift flour with baking powder and salt. Mix all ingredients together well and with the beaten eggs. Add milk to make a dropping batter. Drop by tablespoons onto a hot frying pan and cook over moderate heat allowing about 4 minutes on each side.
Serve hot and well buttered, with or without sugar.
