Preheat oven to 350 degrees

Ingredients:

1 cup self-rising flour
1/4 cup sugar, white or brown
3 big green sour apples, usually Granny Smith
1 egg, lightly beaten
2 ounces cold butter for the pastry
1/4 cup milk
pinch of salt
1/2 teaspoon ground ginger

1 tablespoon of butter for top of apples
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg

Method:
Mix sifted flour, ginger, salt and sugar. Cut in the butter until it's the size of a pea. Don't overwork the pastry. The butter should still be solid. Mix the milk and egg and add to the pastry to make a soft dough. Roll out on a floured board. Place the pastry in a greased pie dish. Slice the apples very thin and place them on the pastry. Add butter, cinnamon, and nutmeg to the top of the apples. Place in the center of the oven with a cookie sheet on the shelf under the pie dish. Bake 1/2 hour. Serve warm with vanilla ice cream or warm Bird's Custard.
