These are usually eaten with tea.
8 cups of flour
pinch of salt, or to taste
1/3 cup of sugar
4 teaspoons of baking powder
1-1/2 sticks of butter
3 eggs
1-1/2 cups of milk
Glaze:
1 egg beaten with pinch of salt
Sugar for dipping
butter, jam,whipped cream
In a large bowl, combine flour, salt, sugar, and baking powder. Make a well in the centerand pinch in the butter. Beat the eggs with the milk and add all at once to the flour mixture. Mix to form a soft dough and turn out onto the floured board. Knead lightly, just until you can shape the dough into a ball. Roll out to 1 inch thick and cut into rounds. Brush the tops with the egg glaze mixture and dip in sugar. Bake at 475 degrees for 10 minutes, or until golden brown.
May many mouths make an empty dish

by a bit of Irish luck,
brightened by a song in your heart,
and warmed by the smiles
of the people you love.
